Kitchari: A Traditional Ayurvedic Meal

It is cooked like oatmeal along with salt and Indian spices. Kitchari is easy to digest and is traditionally consumed as a nourishing comfort food the way that people in the West would consume chicken noodle soup. This organic kitchari can also be used as a monodiet food; many people can use these packs for a kitchari cleanse, whereas some people simply enjoy it for its delicious, hearty taste!

Depending on your toppings, it can suit for breakfast, lunch, and dinner.

Fresh vegetables like potatoes, cauliflower, carrots, and peas can also be added to khichadi during cooking. Kitchari is often served with ghee (clarified butter), Indian pickles, and other condiments and is considered a complete meal, especially for vegetarians. Commonly used spices include:

Recipe for Kitchari: An Indian Comfort Food

Prepare the kitchari by rinsing in a colander. Then, in a heavy-bottomed stockpot, melt the ghee. Add the washed kitchari and sauté for a couple minutes. Then, add the water, along with the turmeric. Bring to a boil, then reduce heat to low, and simmer partly covered for approximately 20 minutes or until it reaches the consistency of a stew. Add more water if needed. Stir occasionally. Pour in bowls and serve hot. Garnish with ghee and cilantro leaves.

Best Accompaniments: Ghee, yogurt, coconut flakes, fresh cilantro leaves, Indian pickle, pappadam, cilantro/mint chutney.
